We also really like the Suburban griddle that was supplied with the trailer and agree it works really well. I like the size and that it stores in the compartment much better than other portable grill we have used. The beauty of having it on the trailer rail is that when the trailer is level so is the griddle—the griddle and drip tray will work best when level. A griddle will be more difficult to level with a separate table unlike a grill where it’s less important.
I also carry a portable (folding) table for a wash basin but I like an REI 4’ kitchen prep table-with adjustable height/leveling feature. Along with an extended hot water hose/nozzle the table sets up nicely to the left of my grill. It makes cleaning dishes and the griddle a snap. We like the supplied portable table so close to the griddle on the rail for sauces/seasonings and a roll of paper towels. I think Rockwood really thought this application out well.
Related to my previous post about the Blackstone Wind Guards for the griddle, I have ordered it from Lowe’s and will report back on the fit and if it solves the wind and splatter problem. It sticks up 3” around and may not be enough for all the splatter but should prevent wind gusts from negatively affecting the flame. I think I’m going to also try to copy the stainless guard (from original post on this thread) in back of the griddle.
