Planning new storage mod

Inmy coachmen northridge 5ver, there is a counter and double sink as you come in the door. There is a cabinet from the living room side under the sink, but the rest of the space under the counter is just dead space and hard to get to. I took some doors off a cabinet and installed a fireplace last year. I was thinking about cutting in to the cabinet from the door side, framing out and hanging at least one of the doors for access to that space. One problem is the water supply lines for the sink just cut diagonally across the space. I would need to cut them off, run them along the floor and add a couple of elbows to run from the floor up to the sink. I could even add a shelf in there and gain about 8 cf of storage space.
