Happy T-day and thanks for reminding me I need to get brine started. Takes a long time to cool down before you can stick the bird in it.

I always brine in ice water for 2 days. I a cooler that works great for bringing.

I heat mine to boiling to dissolve all the salt. Only doing a 13 lb this year, so just overnight will do it for my brine. I need to get a food safe 5g bucket. I'm not contaminating my beer brewing buckets, so I'll see if Dunkin Donuts is throwing away any of theirs that all the fillings come in.

I run a clean brewery! No rogue yeasts or infections here, lol. I got lucky, we are doing a small bird this year, just us and my folks. Bird ended up being 11 lbs after pulling out the giz and neck and all. Everything fit in a big stock pot, right to the very top. Was easy getting that smaller vessel into the fridge too.

Have nothing in the pipeline right now, but hope to be up and brewing again after I recover from my surgery. Getting my guts cut out a week from today, dreading it.

Awesome hope the brid is great. Just the smell of this rib roast is killing me. We have a nice little brew set up also i try to have at least 2 full kegs and 3 in works carboys at all times. My wife wants me to make her a seltzer like white claw.
