I decided to pull the wheels and inspect my brakes instead of just greasing the wheel bearings with the easy lube zerk fitting. Glad I did, here is what was inside one of the brake drums. Could have been real bad if the sheared off bolt had jammed and caused the wheel to lock up.

No idea what Iím looking at but sounds like it could have been really bad! Glad you found it!

I'm scared to see what mine look like but I need to do it. It'll be the first time cracking them open after buying and towing our trailer nearly 4700 miles.

That threaded bolt mounts at the bottom of, and separates, the brake shoes with a slotted star adjustment wheel which appears to be missing. Most likely those two components chewed up the shoes. Simply measure the diameter of the drum and the width of the shoes then call etrailer for replacement. On a CC they are self-adjusting brakes. Get your oil seals at NAPA, far better than the original.
