favorite camping meal
Does anybody have a favorite meal or food that you look forward to while camping? Ours is shrimp, red potatoes, corn on the Cobb fixed in the Turkey fryer.

I don't care much for cooking so I tend to keep it simple. My favorite two meals are:

Shrimp Borrachos
5 lbs. uncooked (in shell) shrimp... thawed and put in plastic bowl or marinating baggie.
Add... 1/2 cup Tequilla 1/4 cup Fresh Lime Juice 2 tbs. chopped garlic 1 tbs. cumin 1/2 tbs. dried oregano 1 tbs. salt 1 tbs. red chili flakes 1 tsn. black pepper 1 tsn. salt 1/2 tsn onion powder or 1/3 cup minced red onion Marinate in fridgerator for minimum 4 hours, no more than a day or so, lime juice will start to "cook" the shrimp. Ready grill.. Throw on and let cook for about 2-3 minutes... make sure shrimp won't fall through grates, otherwise, cook on foil, put under broiler or cook in hot cast iron skillet... Key is that it has to be hot and don't overcook. Just long enough for shrimp to turn orange- about 2-3 minutes. Serve immediately with Margaritas, cold beer or Ice Cold Lemonade. Pass the paper towels around... or lick your fingers... either way... you'll love Shrimp Borrachos. |

My dad taught me this when I was a kid and I make it every time we are in the woods. Its a can of corned beef hash, fried potatoes and scrambled eggs.

Just about anything cooked in a cast iron dutch oven on the fire. Cherry cobbler is right at the top!

Simplified Flank Steak / London Broil
Flank Steak or London Broil...
Same gig... Marinate Meat 1 day in in 50% Pineapple Juice (ie, little cans of Dole Juice) 50% Soy Sauce, 1 Tbs. Garlic, Secret is to cook meat until just about done, but then pull off grill and let it rest for 10 minutes or so (don't worry, it will still be nice and hot). That way all the juices will relax back into meat and won't be left on the cutting board when you carve it up. Enjoy..... |

Ours is Dr Pepper chicken in the dutch oven. Also bacon, eggs, and hashbrowns in cast iron skillets on the fire. Mmmmmm something about that open fire!!! :rolleyes: I love to try new things in our dutch oven all the time. Last time it was layering bacon, sliced potatoes and onions then topping off pork chops lightly seasoned. That one is going to make it's way back into the menu this year!!!

Burger packs - hamburger, potatoes, onions, carrots and mushrooms wrapped in aluminum foil. Cook on grill for 20 minutes on each side.

Anything that contains food cooked outdoors (the way we fix everything when camping) is a favorite of mine! :)

For appetizers, some bacon wrapped jumbo shrimp with either BBQ or brown sugar on top and cream cheese stuffed, bacon wrapped jalepeno's. All on the grill of course and charcoal only, no LP.
