I know exactly of what you speak. My 2021 26FKBS has done the same. Doesn't do it all the time and I can get it to replicate when I want.
Like you said though, doesn't seem to effect the HVAC.

26FKBS tongue weight differences full water vs empty

The fresh water tank being all the way at the back of the camper makes a pretty big difference on tongue weight when it is full compared to empty.

I'm pretty sure the ones in our 2021 are not motion activated. I can turn on the monitor and after a little bit it starts showing pressure and temps without moving.
