3 white braided hoses and valve

I blew the plumbing pipes out last weekend, one faucet at a time. And removed the two low drain caps. But I'm thinking there's a 3 hose valve under the step to the bed, can't remember if that's associated with the fresh water holding tank and how to deal with it

Since you've got a truck camper, the fresh water tank is probably under the bed and that hose is probably the drain for that. Open it to drain the water. There's probably an overflow valve under there to, but that one doesn't normally have cap or valve.

Probably. Usually it's at the bottom of the fresh water tank, but that might be it. The only way to know for sure would be to open it with water in the tank.
