I have a 2002 Forest River Cardinal. The AC doesn't shut off automatically. I have to manually shut it off. Could it be the thermistat? It runs and cools just fine, just doesn't shut off.

You can test this by turning on the air and then setting the temperature up very high. If the air does not shut off in about a minute, your thermostat has a problem. Likely it has either failed completely or is way out of adjustment.

I know that we have to set our thermostat about 3 degrees high to get it to keep the trailer within a range of the desired temperature. Yours might be off by 10 degrees or more, making it appear to never cool to the desired temperature because the thermostat thinks it is many degrees warmer in the RV than it actually is.

The fan will always run. Its the compressor that cycles. At least that is with my Dometic.

Depends on if the thermostat actually controls the a/c.
Our thermostat only controls the heat and the a/c has to be turned on manually. As babcock said, the fan is designed to be 'always on' when the a/c is turned on.

Coleman Mach units will actually shut down after set temp is reached. Don't know if it's just WHEN set temp is reached or if the unit has run for a set time without the compressor cycling. Never really paid attention, just notice that it shuts down then restarts later as temp rises.

This is with fan switch on "Auto".

My Coleman units have AC Hi, AC Lo, AC Hi Auto, AC Lo Auto. The two Auto selections cycle, the other two are constant.

Ac not shutting off

Your thermostat has 3 settings, high, low, auto. You thermostat is not on auto. To set this hold the up and down arrow until you get to auto in the window. If you have trouble it is in the manual.

If yours is Dometic, they went really cheap. Turn to mode you want then turn to "Auto" and do what others have said (set high and wait for a cycle). Unit "Should" cycle even if on low or high but the fan will continue, You have to listen for the compressor.

This is how my Coleman Mach works.
