I would reach out to Lee and tell him your plans on going over the trailer, we did that when friends were picking up their Cedar Creek years ago, they had it in a bay hooked up to power (not sure on water) so we could go over the unit really well. Good luck and let us know how things went.
 
Will the dealer allow us to go through the long inspection and checklist?
If so, do I inspect it before or after their inspection?
Do I insist on doing this before signing paperwork?


I don't want to be a pain for the dealer but I don't want to find something after the fact and have to drive back.

You have the wrong perspective.
Dealers will take advantage of customers who don't demand things a thorough PDI/walk-through.
Forget the "ALLOW a long inspection". It's YOUR money so make sure they don't rush you through. Also make sure they have all the systems up and running.
