Gray tank sensor

They are notoriously inaccurate. Some people say there are better sensors that can be installed in the tank but the majority of us just learn to live with it. I've never tried to work on or change the sensors. I suppose some are easier than others depending on access to the tank. Your best bet is to learn to live with it.
 
I don't know why the manufacturer's even bother. Just a selling feature I guess. The sensor could have grease and soap scum built up on it. Even food particles perhaps. There are tank cleaners you can add and take it for a drive with lots of corners to slosh the tank around with some water in it. Results will vary.
When the shower is slow to drain, or stops draining you know the gray is full and when the toilet gurgles the black is full.
 
Lots of advice on how to clean RV tank sensors with a search. Find a method that works for you.

When ours don't register correctly (won't show empty), I will dump a small bottle of Dawn into the tank, fill it up, and then drive to my next destination. Probably do this once or twice a year.

As for what the sensors actually tell you, it varies by RV. In a previous RV, when the sensors showed full, it was completely full. In our current RV, when The black shows full, I know I have about 4 days left until full.

After using your RV, you will get to know what your particular sensors are telling you. Just takes time and paying attention. Or, do as others suggest, and ignore them until they are over full. Might be successful, might be a mess;)
