grilled zuchinni - super easy

just found this recipe today:

Wash zuchinni and leave the skin on. Cut off ends,slice zuchinni lengthwise and scoop out the seeds. Cut into 1/2 inch or 3/4 inch slices.. they'll look like crescents.

Sprinkle with garlic powder and Montreal Steak Spice or the Montreal Chicken Spice and grill with margarine. Oil doesn't seem to work as well.

You can also add an onion cut in wedges, or red/yellow/green sweet peppers.

This can also be cooked in one of those grill baskets to steer clear of the margarine.

We do something very similar when we camp... we call it campfire veggies.

We use 2 Zucchini, 2 Yellow Squash, 1 purple onion, and 4 potatoes.

We peel the potatoes and cube, slice the two kinds of squash into coins, and dice the onion. We make a large pouch out of aluminum foil that has been doubled. Into the pouch goes all the veggies, some Seasoned Sale, (or whatever I have put on the meat), and a half stick of butter.

We place on the grill for 45 minutes and then serve from a bowl. It is awesome!
