My wife makes it from scratch in the RV (buckwheat pancakes, so good). Not much to it. Our fridge is usually too full to add more anyway. LOL
Has anyone ever pre made pancake mix and taken it camping? If so how long will it last in the fridge?
Cast iron griddle
Coconut oil on griddle
1 cup Hodgson Mill Buckwheat flour (best texture we've found)
1 tsp baking powder
2 tbsp sugar
1/2 tsp salt
1 egg beaten
1 cup milk
2 Tbsp melted butter
She substitutes coconut milk for the dairy milk
She doesn't add the sugar
Instead of 1/2 tsp salt she uses 1 tsp salt
Love it with blueberries or banana and coconut.
Real maple syrup as well.![]()
In the recipe above, keep the milk and add a tablespoon or so of vinegar to the milk and let it sit for 5 minutes or so to sour it. That will make for fluffier pancakes.
The kids also like a dash of vanilla extract for a slightly different touch now and then.
If you pre-mix the dry and pack in the wet you can just about do a shake and done using a saved shake and pour container but I still prefer to slap it all together on site.
BTW, if you use the vinegar trick be sure to stir and not shake. If you shake it you'll probably be wearing it!
